Spinach Strawberry Salad
When I first tasted this salad a number of years back, I thought it would be weird. It had a combo of sweet, savory and salty. But when I tried it my taste buds exploded with flavor! This as good or better than the fancy salads you pay dearly for in a restaurant My friend used to take this salad to friend gatherings, and when she moved I begged her for the recipe! Now I take it and it is as popular as ever. This recipe is one that people literally love and chow down on. You will love it too!
1bag or head of Romaine lettuce chopped
1 bag or several bunches of Spinach chopped
1 C. Bacon crumbles
1/2 to 1 C. Red onion sliced thin
1to 2 C. Feta cheese
1 to 2 C. Sliced strawberries
1 C. Pecan pralines (you can buy some or make them yourself. I make them by taking a 1/2 cup brown sugar in a med bowl, add a few TBSP Heavy whipping cream. Stir, and add 2 Cups pecans. Toss to coat. Pour onto lightly oiled baking pan. Bake in 350 degree oven. Watch to make sure you don’t burn them. Turn them with a spatula after about 5 mins, then put them back in for a few more min. The coating turns to candy when done. Let cool and add to your salad.
1 1/2 C. Sugar
3/4 C. Red wine vinegar
1/2 C. Canola oil
1 tsp. Dry mustard
1 1/2 tsp. Salt
1 1/2 TBSP poppy seeds
Mix up dressing in a blender just before serving, pour over salad and serve. Enjoy this delicious salad!
