Being on an elimination diet is hard! I haven’t had anything like bread/muffins in months! I was feeling so deprived yesterday, that I just had to find a way to make something sort of ‘normal’! I found this recipe on the blog Love Bake Eat. She Whitney has great stuff!! So this recipe just hit the spot! I tweaked one I found to be egg/dairy/grain free!
This little muffin just made my day!!
1 1/4 C Almond flour
1/2 C Arrowroot
2 Tbsp Coconut flour
1/2 tsp. Baking Soda
1/8 tsp salt
1/4 C. Softened Ghee
1 tsp. Pure Vanilla extract
4 Eggs or use Bob’s Red Mill egg replacer (this is what I used to make it egg free for me)
1/3 C pure Maple Syrup
1 C ripe Strawberries, hulled and finely diced (could pulse in a food processor)
1/2 C. sugar free/dairy free chocolate chips, sweetened with Stevia, I like Lily’s dark chocolate chips!
Heat oven to 350°.
Prepare a muffin tin with 12 liners, spray with a small amount of cooking spray, like coconut oil spray.
Mix dry ingredients together in a mixing bowl stir to incorporate.
Mix 8 Tbsp of water with 4 Tbsp egg replacer in a small bowl, stir until smooth and set aside to thicken.
Take wet ingredients and pile on top of dry in mixing bowl. Strawberries, syrup, vanilla, ghee and eggs (or replacer, stir really good to whip up before adding after letting it thicken)
Gently hand stir all together until well blended.
I used an old fashioned ice cream scoop (that was my Grandparents, it still has one of those old labels made from the plastic label makers with her name on it, I love it!) Level scoops to measure out 12 muffins.
Place in preheated oven and bake for about 30 mins.
I live at 7000 ft. so watch the muffins to determine how long for you and your oven/elevation. Use a knife and press into a muffin to see if the knife comes out clean.
Remove from oven, cool and enjoy!
They are super yummy for days! (Or until they are gone, 😉 )
My sons both ate one, one of them thought is was really great, and the other one chuckled and said, ya it was good…I know he was humoring me a bit, but they haven’t been completely sugar/dairy/grain free for 4 months, lol, so I think their taste buds are different! 🙂
