Easy Banana Nut Bread

I literally throw all the ingredients one by one into my Kitchenaid mixer.  I don’t hand mash the bananas or anything, it just gets beaten in the mixer.  Super quick and easy, make ahead of time breakfasts or snacks for busy families on the go!

Recipe

Preheat oven 350 degrees

Cream together in  Stand mixer:

  • 3 really ripe bananas
  • 1/2 C. butter or shortening
  • 2 C. Sugar
  • 2 eggs

most times I put the bananas in first, mix then to mash them up, then add butter,sugar, then eggs.

this is 6 very ripe bananas, I usually double this recipe for 3 loaves.

Then Mix in:

  • 1/2 C. chopped pecans or walnuts
  • 2 C. Flour
  • 1 tsp. soda
  • 1/2 tsp. salt

Mix Well, and pour into greased and floured pan.  Will make 2 small loaves or 1 larger loaf.

I like to double to recipe using up more overripe bananas, (if your house is anything like ours there are always bananas going over to the too ripe to eat side) and makes 3 nice sized loaves.

Bake for about 50 minutes at 350.  Knife or toothpick inserted into center of loaf will come out clean.

Let cool for 10 mins. and turn out onto cooling racks.

We love it warm out of the oven with a little butter! Yummy!
